Pear Salad With Pecans, Blue Cheese And Maple Dressing
This recipe is courtesy of Chef John Plante – Craft Cuisines, Duluth, MN.
Ingredients:
- 1/4 cup Champagne vinegar
 - 1/2 cup extra-virgin olive oil
 - 1 teaspoon Dijon mustard
 - 1 tablespoon pure maple syrup
 - 1 teaspoon kosher salt
 - 12 ounces of your favorite greens (spring mix, baby spinach, etc.)
 - 2 pears, halved and thinly sliced
 - 1 cup pecans, toasted
 - 1/2 to 3/4 cup crumbled blue cheese
 
Preparation:
- Whisk together first 5 ingredients to create the dressing.
 - In large serving bowl, combine greens, pears, and pecans.
 - Drizzle dressing over the salad and toss well to coat.
 - Sprinkle crumbled blue cheese over the salad.
 - Enjoy!
