Pear Salad with Pecans, Blue Cheese and Maple Dressing

This recipe is courtesy of Chef John Plante – Craft Cuisines, Duluth, MN.

Ingredients:

  • 1/4 cup Champagne vinegar
  • 1/2 cup extra-virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 tablespoon pure maple syrup
  • 1 teaspoon kosher salt
  • 12 ounces of your favorite greens (spring mix, baby spinach, etc.)
  • 2 pears, halved and thinly sliced
  • 1 cup pecans, toasted
  • 1/2 to 3/4 cup crumbled blue cheese

Preparation:

  • Whisk together first 5 ingredients to create the dressing.
  • In large serving bowl, combine greens, pears, and pecans.
  • Drizzle dressing over the salad and toss well to coat.
  • Sprinkle crumbled blue cheese over the salad.
  • Enjoy!
