Mychal’s Cookies

Ingredients
2 heaping cups almond meal/flour
1/4 tsp. sea salt
1/2 tsp. of baking soda
1/4 cup unrefined coconut oil, melted.
3 tbsp. pure maple syrup
2 tsp. pure vanilla extract
1 cup dark chocolate chips
1/3 cup chopped walnuts

Preheat the oven to 350 degrees and line a cookie sheet with parchment paper.
Stir together the almond meal with the sea salt and baking soda. Add the coconut oil, maple syrup and vanilla. Then stir in the chocolate chips and the nuts. (Add more coconut oil or cold water if you need more moisture)
Use a tablespoon to scoop onto cookie sheet. You can flatten these a little with the tablespoon or your fingers (they won’t change shape much while baking). Bake for 8-9 min till edges or slightly golden.

Mychal says, “I have found they are better a little undercooked than overcooked! Cool for 5-10 min…or until you have to give in because they are so damn good! 🙂 You can also add a tbsp. or 2 of flaxseed for a little different flavor and added omega 3’s!! Makes one dozen.”
